Fall means Pumpkin season especially here in New England.
As soon as August rolls around everyone starts making their trip to Dunkin Donuts and Starbucks for their annual pumpkin spice. Did you know? Pumpkin spice was released 14 years ago. Before then who would think to put pumpkin in their coffee? All I keep thinking about is all the coziness this season brings along. It’s literally my favorite season and brings along all the happy times. Like family functions and holidays.
One thing I love about Fall is all the mocktails and cocktails you can come up with. Mixing different things is always fun when you are in the kitchen. Kiddos or not. Since being on Keto or just low carb in general, I still want to enjoy the different types of drinks. It’s that time of year where you can still entertain outdoors but also there’s nothing wrong with taking the party indoors.
Before starting the parties, starting your day is even more important. That’s why this Pumpkin Spiced Iced Latte is so refreshing. Plus it’s one drink that’s just for me. A can’t take this one from me. From working from home to out doing errands this latte is so delicious. The best part is, this is homemade with only a few ingredients. Literally under five minutes. Way less time than standing in line. Who has time to waste during this busy season.
Ingredients
- 1 cup of ice 1 cup of coffee (you can use cold brew)
- 1 tsp Pumpkin Extract
- 1 tbs Low sugar Pumpkin Syrup
- Almond Milk or Creamer
- 2 tsp Truvia
- Vanilla
- Ice
- Ground Cinnamon
- Whipped Cream for garnish
Instructions
- Brew Coffee. I used our Keruig
- Add 1/2 cup of ice in cup
- Add coffee to cup
- Add 2 tsp of Truvia or Stevia
- Mix around
- Add creamer if you like your coffee black you can add in Vanilla Extract
- Add in Pumpkin Extract
- Add in Pumpkin Syrup
- Mix around
- Add 1/2 cup of ice
- Sprinkle on cinnamon on top
- Add whipped cream if needed

If you’re a pumpkin everything lover and coffee enthusiast you will love this recipe. Plus topping with cinnamon makes this coffee drink even more like Fall. You can also add pumpkin essential oil for an even better natural taste. Such a great aroma. Who wouldn’t love that?
