Growing up chicken, was and still is, always a go-to. Plus, learning to cook as a Hispanic (thanks to my grandmother), chicken was an easy and practical dish to prepare. Everyone pretty much loves chicken, especially what we call pollo frito, which is also fried crispy chicken.
With the busiest season of all here, fall, it can be hard to have dinner on the table by a certain time. That is why having an easy under 20-minute recipe is something great to cook up during those weeknights. This is my first year having a child in evening sports, so this dish is a great must-make in our house.
I like to call this one The Crispiest Chicken!
When I make fried chicken at home, I always opt to fry it the old fashioned way on the stovetop. Yes, there are fancy gadgets out there but one thing is, my grandmother was an old fashioned cooker. When it comes to certain recipes, I still do it the same way she would do it. You always get your trial and error, and recently, I decided to swap out an important ingredient and add corn starch. The Crispiest Chicken Recipe
1/2 cup of vinegar
1 pack of chicken ( I love to use drumsticks)
3/4 cup Argo® Corn Starch
1/2 cup of flour
Dash of salt
Dash of pepper
1 tbs adobo for chicken
1 tbs of sazon
1 tsp cumin
1 tbs of Italian seasonings
3 cloves of garlic smashed up or 1 tbs of minced garlic
- I learned a trick a couple of months back, which blew my mind. Wash your chicken with white vinegar.
- In a large bowl, mix all the dry seasonings then season over chicken. Let sit while you prepare the coating for chicken.
- In a bowl, mix 1 egg, flour, and corn starch.
- On a plate or another bowl, crack the egg and mix together.
- Dip each drumstick in egg then in chicken coating until each drumstick is coated.
Fry each drumstick until each is fully cooked. You can also use a thermometer to confirm they are cooked thoroughly.
Voila! You are done!
