Panera Bread has always been my favorite when it comes to eating semi-healthy for lunch. They have the best ingredients. Always fresh and the recipes taste delicious.
My favorite is their you pick two programs they offer. You can pick a sandwich, soup, salad, or bowl and pair it with another. You get the full serving of the sandwich and bowl. The soup and salad will be half the size.
Panera’s portions are always on point. Plus when you do order you can see the nutritional facts of each menu item which is also a plus.
When I first ordered their Baja bowl I didn’t know what to expect
I was absolutely amazed. I’m normally a chipotle girl but this bowl was amazing minus the guacamole. I had to figure out how to make it at home.
What you need to make this copycat inspired Panera Bread baja bowl

All you need is a few simple ingredients to get started. First, pick out your chicken. I chose chicken breast but you can really choose any kind of chicken you want. It’s your bowl.
Then you can choose your spices. I decided to opt for garlic powder, salt, pepper, adobo, garlic, onion powder, and Goya sazon. If you want it a bit spicy you can add in red pepper, green chiles, and more. It’s really up to your liking.
Normally their bowls have combo rice plus quinoa so I opted to use brown rice and quinoa. I also added some garlic to the quinoa to give it some flavor. Preferably minced garlic. I used brown minute rice and minute quinoa to make the process go quicker but you’re welcome to cooking your own rice if need be. If you’re pressed on time then the minute rice works perfectly.
Now comes the fun part. Add in any extras. Cilantro is in the original recipe so I added that. Chopped avocado is a must for me. Also, I added cherry tomatoes. The Panera version also includes cherry tomatoes. I also added in extra protein so I added in a whole boiled egg. Also not pictured your fave dressing. The restaurant version comes with Greek yogurt. I didn’t have any handy so I opted for Ranch which I drizzled over the dish.

Copy Cat Panera Bread Baja Bowl With Chicken
Ingredients
- 1/2 pounnd of chicken breast
- 1`/4 cup of vinegar
- 1 tbs Garlic Powder
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 2 tbs Minced Garlic
- Onions (half and onion)
- 1 Avocado
- 1 Boiled Egg
- 1 cup of cherry tomatoes
- 1 serving / cup Minute rice
- 1/2 cup of quinoa
Instructions
- Wash chicken with vinegar
- Season chicken with spices
- Cook chicken
- Make rice ( from scratch or minute rice)
- Make quinoa
- Cut up egg
- Core avocado and cut into chunks
- Cut cherry tomato in 1/2's
- Mix all together
- drizzle with your favorite greek yogurt dressing or ranch dressing
